The pancakes are very filling, satisfying, and keep you full for quite a while. Since it’s a common Slavic culture recipe, it’s made similarly by many people.
Here is a classic Ukrainian potato pancake recipe that my mom and grandmother make, that I absolutely adore. Serve these with a dollop of sour cream or apple sauce .
1 lg Onion grated
6 ea Potato peeled & grated
2 tbsp Flour
2 ea Eggs
2 tsp Salt
3/4 ts Black pepper
1 pt Sour cream
1/2 pt Cream
· Place the flour, eggs, salt, pepper in a bowl, and mix with a whisk until smooth. Let rest for a few minutes.
- Grate the potatoes and onion into the bowl and mix. You may do this in a food processor as well or a blender.
- Heat oil in a skillet and when hot drop large spoonful of the mixture. Cook until browned on one side. Turn and repeat.
* Serve with sour cream in a bowl, on the side. Pancakes are best served fresh; however, they may be reheated.
